Why Take Elderberry Syrup?
In my post showing you how to make homemade elderberry syrup, we talked about all the benefits of elderberries.
Elderberries have been shown to possibly be effective in fighting the flu (among many other things). As stated on WebMD:
A specific elderberry juice syrup seems to relieve flu symptoms and reduce the length of time the flu lasts when taken by mouth within 48 hours of the first symptoms. Taking elderberry lozenges within 24 hours of the first symptoms also seems to reduce flu symptoms. Relief seems to occur within 2 to 4 days of treatment for most people. Taking a product that contains elderberry juice and echinacea also seems to relieve symptoms and reduce the length of time flu lasts. It seems to work similar to the prescription drug oseltamivir (Tamiflu).
Those are great reasons to try elderberry syrup during cold and flu season!
Elderberry Syrup Gummies
Despite the amazing benefits of elderberry syrup, my kids don’t always look forward to taking it. Unless I turn it into gummies, that is!
Whenever I have a batch of these in the refrigerator, they actually beg for them!
And, they’re a lot less messy than the syrup. These are a win/win!
Supplies Needed to Make Elderberry Gummies
You only need a few ingredients to take your elderberry syrup to the next level. Gelatin is the key ingredient!
Heat 1/2 cup water in a small saucepan until hot but not boiling.
Put 1 cup elderberry syrup in a large bowl and gradually sprinkle 1/4 cup gelatin on top. While gradually sprinkling the gelatin on the elderberry syrup, stir very gently with a fork to combine, just enough to moisten the gelatin powder.
Let the gelatin sit for a minute until it starts to gel a bit.
Add hot water to gelatin/syrup mixture and whisk together until well-mixed and gelatin has dissolved.
Pour mixture into molds (or use a small dropper to carefully drop into the molds).My kids love the little gummy bear silicone molds.
We also have a Lego one which is a favorite. If you don’t want to use a mold, you can also just put the gelatin into a glass dish and cut in squares after it firms up.
Remove gummies from molds and place in an airtight container.
Store in refrigerator for up to 2 weeks.
We take a few of these daily (depending on the size of the mold you used, the amount will vary) if we’ve been exposed to illness.

Elderberry syrup gummies are an easy way to get kids excited about taking elderberry syrup! First make your own elderberry syrup and then turn it into gummy bears with this simple recipe!

Because elderberry may stimulate the immune system, it could interfere with medications taken to suppress the immune system. These medications include corticosteroids (prednisone) and medications used to treat autoimmune diseases. People with organ transplants should also avoid elderberry.
Are There Elderberry Side Effects? There is a downside to consuming too much elderberry, and that is an upset stomach. Just like with any high fiber fruit, eating too much can cause stomach pain, upset stomach, and diarrhea.
Do Sambucol Black Elderberry products require any special storage conditions? It is recommended that you store Sambucol Black Elderberry products in a cool and dry place. Storing in the refrigerator is fine.
How do I Take Elderberry Syrup when Sick. Some people take 1 tablespoon (15 ml) of Elderberry Syrup during the cold and flu season daily, and then increase this dosage to once every 2-3 waking hours at the very first sign of illness or known exposure to the cold or flu, for 2-4 days.
Risks. Never eat or drink any product made from raw elderberry fruit, flowers, or leaves. They contain a chemical that produces cyanide. They can cause nausea and vomiting and, at high doses, more serious effects.
Children and pregnant or breastfeeding women shouldn't eat elderberries at all, since it's not known how the berries might affect them. Elderberry supplements can interfere with diabetes medications, laxatives and diuretics, so you shouldn't take elderberry supplements if you are on any of these medications.
Stay on the safe side and stick to food amounts. "Autoimmune diseases" such as multiple sclerosis (MS), lupus (systemic lupus erythematosus, SLE), rheumatoid arthritis (RA), or other conditions: Elderberry might cause the immune system to become more active. This could increase the symptoms of autoimmune diseases.
The common side effects of taking raw elderberry plant products, such as fruit, flower, leaves, bark, or root include: Stomach problems. Nausea and vomiting. Diarrhea and constipation.
Cardiovascular disease risk biomarkers and liver and kidney function are not altered in postmenopausal women after ingesting an elderberry extract rich in anthocyanins for 12 weeks. J Nutr. 2009 Dec;139(12):2266-71. doi: 10.3945/jn.
Elderberries may be beneficial for the heart, as they have been associated with positive effects on blood pressure; the anthocyanin content increases the release of nitric oxide—which helps widen the blood vessels and improves blood flow, leading to a decrease in blood pressure.
No interactions were found between Elderberry Gummies with Vitamin C and Zinc and magnesium oxide. However, this does not necessarily mean no interactions exist. Always consult your healthcare provider.
Our study showed, that elderberry can promote steroid hormone release, especially estradiol, which is considered a promoter of ovarian cell proliferation and viability and ovarian folliculogenesis. Therefore, the stimulatory action of black elder extract on healthy ovarian cells may be suggested.
The elderberry plant contains a chemical that produces cyanide in the leaves or other plant parts and in the unripe green fruit. This can cause nausea, vomiting, and diarrhea, or more serious side effects if consumed in large quantities.
The most potent form of elderberry is raw elderberry syrup (Dr. Mobley suggests syrup made with organic, fresh-pressed elderberries). To neutralize toxins, specifically cyanide-inducing glycosides, heat treatment is a must. Boiling elderberries for at least 30 minutes is the go-to method. This ensures the destruction of harmful compounds. Steaming or baking can also do the trick, as long as the berries reach a high enough temperature.
