Growing up, my mom often served a meal she called “noodleroni.” It was a simple dish comprised of macaroni noodles, tomato juice, and margarine. She called it her “end-of-the-month” meal because it cost so little to serve. This was an ideal choice when there was “more month than money.”

But to we, her family, noodleroni was more than cheap food. It was the perfect comfort food, especially when you were sick. It was the favorite. When I had a family of my own, my husband and kids grew to love it, too.

I felt terrible for a years, and had no answers as to why. Then, new doctor discovered I was diabetic. “I can either put you on insulin or you can go on a keto diet,” he said. I didn’t hesitate a moment to choose keto over needles, and I’ve never regretted that choice.

While others I know are taking diabetes medications and progressively becoming more and more ill, I completely changed my life. Within three months of starting keto, my blood sugar was normal. My autoimmune disease went into remission, my cholesterol and blood pressure returned to normal as well. The best part was the weight loss of 45 pounds. I felt (and feel) great!

Like most people just starting out with keto, though, there were foods I missed. One was noodleroni. After a lot of research, I realized cabbage would make a good alternative for the noodles. I combined a couple of different recipes I found online. My goal was to make a dish that was equally as delicious and satisfying as Mom’s noodleroni.

Truth be told, I actually think this recipe is better than what my mom made. (Sorry, Mom!) Even my picky-eater children love it.

Once again, I have a food to turn to that makes me feel better. I make this if I’m getting sick, or just want some comfort food. It’s also great for when I want to pinch back my budget.

What is goulash?

It’s actually a traditional Hungarian stew, made of meat, vegetables and lots of paprika. It became Americanized when noodles and chunks of tomatoes were added.

How is this a KETO goulash recipe if noodles are in it?

I took out the regular noodles that are commonly found in goulash and replaced it with thin sliced cabbage. It cooks up great, and has that noodle feeling on your tongue.

Ingredients:

  • 2 lbs. ground beef or venison
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 (15 oz.) can tomato sauce
  • 2 teaspoons dried basil
  • 1 (25 oz.) can diced tomatoes
  • 2 tablespoons dried oregano
  • 1 1/2 tablespoons coconut aminos
  • 1 tablespoon sea salt
  • 1/2 teaspoon ground pepper
  • 1 cabbage, cored and sliced thin

Instructions:

    1. Cook the meat in a large pot over medium-high heat, breaking it into small pieces.
    2. When the meat is no longer pink, add the onion and garlic, sauteing until tender.
    3. Stir in the remaining ingredients, except cabbage, and bring to a boil over medium heat.
    4. Add the cabbage, a handful at a time, stirring well after each addition. Reduce heat to medium-low, cover, and cook for 10 minutes, stirring occasionally until cabbage is soft.
