Blueberry Muffin in a Mug with Streusel Topping
Just like a freshly baked muffin, this muffin is light and fluffy in texture yet made so simply. Adding the streusel is a must because just like muffins it creates a lovely, sugary and crispy layer on top. It’s just delicious!

Ingredients
- 4 tablespoons all purpose flour
- 2 tablespoons sugar
- ⅛ teaspoon* baking powder
- 1/16 teaspoon* baking soda
- 3 tablespoons milk
- 1 tablespoon vegetable oil
- 1 tablespoon blueberries , fresh or frozen
Streusel topping- 1 tablespoon (½ oz/15g) butter, cold
- 1½ tablespoons all purpose flour
- 1½ tablespoons brown sugar*
- ¼ teaspoon vanilla extract
Instructions
In a microwave safe mug mix together the first 6 ingredients until smooth.
Mix in the blueberries.
In a small bowl, rub together the streusel ingredients with a fork until butter pieces resemble bread crumbs.
Sprinkle streusel on top of muffin batter, spreading out evenly across the surface.
Microwave for 1 minute or until it is firm to the touch on top (timing is based on my 1200W microwave so your timing might vary).
Enjoy immediately!

Brown sugar can replaced with white if needed
⅛ teaspoon is simply a ½ of a ¼ teaspoon

- 2 tablespoons applesauce*
- 1 tablespoon vegetable oil
- 2 tablespoons milk
- ¼ teaspoon vanilla extract
- 5 tablespoons all purpose flour
- 1 ½ tablespoons brown sugar
- ¾ teaspoon ground cinnamon
- ¼ teaspoon baking powder
- ⅛ teaspoon salt
Cream Cheese Icing- 1 tablespoon cream cheese , softened
- 2 tablespoons powdered sugar
- 1 teaspoon milk
Instructions
Combine all of the ingredients in a microwave safe mug then whisk together with a fork until combined and smooth.
Microwave for 1 minute or until it’s firm to the touch on top. If it is not fully cooked microwave for an additional 15 seconds. (timing is based on my 1200W microwave so your timing might vary)
Cream Cheese Icing: mix all of the ingredients together until smooth.
Serve warm topped with cream cheese icing.
Enjoy immediately!

French toast is an incredibly easy breakfast. I love it because it uses ingredients you nearly always have on hand. And now you can make it even faster with less mess and wash up. 🙂 You can add whatever you like to your French Toast or just keep it plain Vanilla.I’ll show you how I make it BIG & BOLD with some lovely chocolate.

Ingredients
- 5 tablespoons white bread , buttered and cubed
- 5 tablespoons milk
- 1 egg
- 2 tablespoons maple syrup (or sugar)
- 1 tablespoon of chocolate chunks
Instructions
In a microwave safe mug, mix together the egg, milk and syrup until combined
Add the bread to the mug and press it down so they are submerged within the liquid
Add the chocolate chips to the mug and give a little stir to incorporate them in the mixture. Let it stand for 5 minutes for the bread to soak up the custard.
Microwave for roughly 1-1½ minutes. I suggest checking it after 1 minute and go from there. The timing is based on my 1200W microwave so yours might vary.
Serve with whipped cream on top and enjoy warm

Hi Gemma, my friend and I have made a few of your recipes and have noticed that they have very high sugar amounts We have tried your breakfast blueberry muffin. It is very nice but it has 3.5 table spoons (52.5g) and a child’s daily sugar allowance is 24g I appreciate that this might also be for adults but their daily sugar allowance is 30g and this is just one thing in the day. We usually reduce the sugar and today we reduced the sugar to less than 2 tables spoons but that is still too much. We do like…Read more »

This is my FAVORITE mug recipe! The blueberry muffin, that is. I haven’t tried the others yet, but I’m gonna! Light, fluffy and I even messed it up by not microwaving it enough and heading to work with it basically raw. I finished cooking it about a half hour after I originally microwaved it and it was still lovely!!! Thanks for the wonderful recipe! My Friday just got even better!

Super yummy! The muffin had a great texture, soft and moist. I replaced white sugar with brown sugar and added a pinch of almond extract. Definitely a keeper!

Hi your recipe says you can use frozen blueberries I’ve always defrosted them before eating can you actually cook them in the microwave without defrosting them want to check before making it.thanks

I made the mug muffin but substitute chocolate chips for blueberries. Had to cook it for an additional 30 seconds. But it was AMAZING! Will be making again very soon! Thank you so much for this awesome recipe – perfect to fulfill my pregnancy craving without making a whole batch of muffins!
