🍹Ingredients
Here are the ingredients we used for this cocktail. You can find more information for substitutions below.
- Fresh lime juice
- Gin - We love Empress 1908 gin, it's our preferred gin. It's a botanical gin with a slightly floral flavor, made in small batches in copper pots. Dry gins work best for this recipe.
- Pomegranate juice
- Ice cubes for the glass and shaker
- Ginger beer
- Garnishes - Pomegranate seeds (arils), a rosemary sprig, and lime wedges or a lime wheel make for the perfect garnish on this cocktail.

✨Substitutions & variations
Here are a few suggestions on additional flavors to try, or simple variations to this recipe.
- Swap the citrus juice - If you prefer, you can use lemon juice, blood orange juice, or even grapefruit juice in this cocktail.
- Swap ginger beer for soda water, seltzer water, or club soda if you prefer something less sweet. Keep in mind, you may want to add a little simple syrup for a touch more sweetness in the drink depending on your tastes.
- Low carb cocktail - Simply use diet ginger beer to make this drink low carb.
- Add tonic water for a distinct bitter flavor instead of the sweet and spicy flavor ginger beer provides.
- Swap ginger beer for ginger ale - It won't have the same punchy ginger flavor, but it will still add some nice sweetness and fizz.
- Stronger cocktail - If you like your drink a little stronger, add 2 ounces of gin instead of 1.5 ounces.
- Sweeter drink - Love a sweet drink? Add this drink to a high ball glass so you can add more ginger beer.
🔪Prep work
- Juice the limes.
- Remove the fresh pomegranate arils from the fruit.
- Measure out the remaining ingredients, except for the ginger beer. Keep the ginger beer container closed so it doesn't become flat.

Add ice to a cocktail shaker. (Image 1) Pour in gin. (Image 2)
Pour in the lime juice, (Image 3) followed by pomegranate juice. (Image 4)
Shake vigorously to combine and chill, then, strain into an ice-filled glass. (Image 5) Top with ginger beer. (Image 6)
Garnish with lime, a rosemary sprig, and pomegranate arils. Enjoy!

How to store the leftovers?
This drink is best enjoyed right away, and we don't recommend making it in advance. However, if you need to save leftovers, store it in an airtight container in the fridge for up to 2 days. Do not freeze. Please note that the ginger beer will become very flat, and the ice will melt in the drink, watering it down.
How to make a large batch:
If serving a crowd, grab a punch bowl or large pitcher. Add in lime juice, pomegranate juice, and gin. For a festive look, add in pomegranate arils, fresh lime slices, and small sprigs of rosemary. Stir to combine, and store in the fridge until it's time to serve, up to 24 hours in advance.
When it's time to serve, add ice to the bowl or pitcher, followed by ginger beer. Give it a quick stir, and ladle into ice-filled glasses. Enjoy!

Ingredients
- 2 ounces pomegranate juice
- 1.5 ounces gin
- 0.5 ounce lime juice
- 1 ounce ginger beer to top
- garnish with: pomegranate arils, a lime wheel, and rosemary
- ice for the cocktail shaker & glass
Instructions
Fill a cocktail shaker with ice. Add gin, lime juice, and pomegranate juice. Shake vigorously for 30 seconds to chill.
Strain into an ice-filled glass. Top with ginger beer, then garnish with a lime wheel, pomegranate arils, and fresh rosemary. Enjoy!
We don't recommend saving leftovers, but if you must, store them in an airtight container in the fridge for up to 2 days. Just be aware that the ice will melt, watering down the drink, and the ginger beer will go flat.
Notes
